Visiting from Texas and stopped by to have lunch with my husband celebrating his birthday. The hotel interior is currently under a renovation . The restaurant was beautiful with spectacular views. Our service was attentive and refreshing. I highly recommend the King Crab Chowder soup! Not only was it delicious, but the presentation was perfect!

Another wonderful meal at the Banff Springs Hotel. This time festive brunch in the Vermillion Room.
It was very busy when we arrived early at 1230 for a 115 reservation. We were able to be seated right away at a table by a window where we could watch the ice skaters outside.
The buffet was everything you would want a buffet to be. Fresh food replenished often. Crab legs, prime rib, amazing squash ravioli.
The hotel itself is stunningly beautiful at Christmas.
We stepped out onto the balconies outside the Vermillion Room where we took in the majestic mountains.

We were treated like gold upon arrival for our 20th wedding anniversary. I had mentioned it was our special day when booking the reservation. We were seated at a window with spectacular views and provided a complimentary drink. A big thank you to April, the events manager for the drink. We happened to meet her a few days prior while touring the hotel and we shared with her that we used to work there 30 years ago and it was our anniversary. She went above and beyond to make the dinner special without us asking for anything.

Jeremy, our server was great and very attentive. He had lots of good food and drink suggestions. He also shared his passion and stories of working at the Springs, as we can relate to our time working there.

Another special moment was when the assistant restaurant manager Craig stopped by to ask us how our meal was and wanted to know more about our story as he also knew it was our anniversary.

We had a three course meal here as part of a tour and I was quite disappointed by the service. The food was great and I actually enjoyed the salmon a lot. However it took ages for food to come out, from finishing our main course and getting our desert(which was brownies with cranberries) it was a 28 minute wait. The full three course meal was almost 2 hours long due to service. When asked why the dessert took so long, the waitress responded with no chefs were working currently as they were taking breaks despite it still being lunch hours.

Had a dinner reservation at The Vermillion Room and my party and I had a great time. Our server, PJ, did a fantastic job the entire evening.

We ordered mocktails which were the best we tasted on our trip to Canada, and we ordered mocktails from every restaurant we went to.

We also ordered the mashed potatoes and truffle pasta as appetizers. The mashed potatoes were fantastic on their own, but there are also cheese curds hidden in the potatoes - those bites were phenomenal. The truffle pasta tasted like a high-quality truffle dish, no sickening truffle oil. I couldn't stop eating it.

I ordered the steak frites and my wife ordered the lobster gnocchi, both of which were delicious. The crust on my steak was one of the best I have ever tasted. Fries were hot and fresh, the aioli for dipping was delicious as well.

For dessert we had the strawberry sorbet and the lemon tart. They were okay - neither dish was particularly impressive.

Overall, a great meal and I would strongly recommend making a reservation if you're interested in a fine dining experience in Banff at the historic Fairmont. If I find myself in the Banff area again, I'll make sure to stop by this restaurant again.

Wonderful dining experience. PJ was a great waiter. He took extra steps to make sure we got what we wanted. The pork chop and the roasted chicken were delicious! Of course the French onion soup was on point. Crème brûlée was the bomb.

The buffet was so delicious that I completely forgot to take pictures of the food. There is a wide variety of options. Great options for vegetarians! 🌱 The service was polite and good overall. I really think what it costs correlates to the quality of everything, so it is worth it. Highly recommended.

Excellent 5⭐️⭐️⭐️⭐️⭐️- service and food. The restaurant offers a buffet and menu items. The buffet was fresh and a large variety of hot items such as waffles, pancakes, eggs, and bakery items- muffins, breads, pastry. Beverages - juices and hot coffee and tea. Service was attentive and so helpful.
The Vermillion also offers the 360 dome for a special dining experience. We are a part of two and the dome is basically set for parties if 3 or more. If less then 3 you are charged an additional fee. Contact them for full details.
Our breakfast was included in our room stay so check with the front desk when reserving.
